I haven't made it in a long time. The Mrs is a big fan. Do you have a particular recipe you like best? Also, what do you have with it, side dishes, etc.?

Although, I believe my wife requested gambas al ajillo for tomorrow.

We're in the midst of Dry Run #4 - the fourth practice run to migrate millions of records comprising billions of rows of data from our existing credentialing system to the new system.  Long hours of tedium punctuated by moments of sheer terror.

I'm hungry.
I was awake at 2am, so hit the last of the leftover corned beef hash from Tuesday's dinner, which was made from the leftover corned beef and potatoes from Monday night.

It was a tough choice, because last night's dinner was Campero fried chicken and scratch-made buttermilk biscuits.  Been a good food week here.

Might want to go with that then. Lol

No side dishes, other than bread. This is the recipe I use, pretty simple and straightforward.

Though, I do leave out the celery and carrots to appease the kids, since 2 out of 3 of them aren't a fan of it. And I've never tried it with bacon. Not sure why, since bacon generally makes anything better. But the first time we tried this recipe, it was pretty damn good, so I've just continued to roll with it as-is.
