There's always something to take over the time you have free now by not working. We'd all be just as busy if there were 30 hours in the day, I think.

Verdict on Pork Roll...we like it.

My late FIL came from Newark, but I don't recall him ever mentioning Pork Roll or Taylor Ham. But it probably wasn't available to him in Tucson in the 1960s-1980s before the foodie explosion hit grocery chains. And he was blue-collar to the bone, so not given to paying deli prices. The man liked predictability. Roy knew what he was having for dinner by what day of the week it was, except on Sunday when it could be roast chicken or ham. And he and his brother always ate sardine sandwiches with stinky cheese on New Years Eve.

Me, I've never been to Jersey, and never noticed Pork Roll in any of the NYC delis I've been to. I'd never even heard of it until y'all brought it up.

I'm a west-coast boy. I don't think we really have any regional food passions out here, beyond regional fast-food chain loyalties and the standard ethnic cuisines. These kinds of things are imported. I guess "Seattle Street Meat" - a hot dog with cream cheese - might qualify. But I'm not a fan of cream cheese on a dog. I'm more partial to Chicago dogs.

But tomorrow morning I'll try a Jersey Breakfast. Is it utter blasphemy to put Mozarella on that? Not a fan of American cheese.

You're ok with mozzarella. I've never used American cheese, either. Also not a fan. But I've used a wide variety of other options, including mozzarella.

My MIL corrects me. She says Roy's brother Ed, who lived in Trenton, always packed some "Taylor Ham" in his suitcase when he visited. And they had found some in Tucson at some point, for a while.

Uncle Ed was a riot. He's passed now too, but that man may have been the funnest guy I've ever been around. He and my wife's Uncle Gil, from the other side of the family.

Ed loved pranks and cheap jokes. And women loved that man. He was married faithfully for like 60 years. All the Schneider boys married difficult women except Roy. How Ed remained faithful for all those years, when he could attract fawning attention from twenty-something girls when he was in his 70s amazes me. He was a "damn-guy." Smart as a whip, but always warm and cheery. I miss him.

My MIL married Roy, the baby of the Schneider family. The man had some real hangups, but he met this girl who had a horrific childhood experience, who'd been adopted by his oldest brother, and he was smitten. And for all his personal hangups and mommy issues (he got stuck taking care of mama while his brothers all went off to fight WWII, and afterward took full advantage of the GI Bill and became successful, while Roy ultimately retired as a janitor making $12 an hour), he took care of that broken girl and gave her a gentle life. The only time the man ever asked me to come help him with something was when he was building two bedroom sets for Penny. And he never told me he was dying and he knew he was dying. He was a real sumbitch that way. I should have figured there was something up if he asked me to help him with something.

The only reason my marriage has survived 33 years and my own attempts to sabotage it is because Carol has her dad's cussedness and her mom's patience. That, and the fact that Penny assured her daughter that I'd eventually grow up.

Sorry, I'm feeling a little nostalgic tonight, and I've got a little whiskey in me.

We all stand on the shoulders of giants. We just don't realize it.

Pork Roll has never been particularly big in Northern NJ or NYC.  Pretty much New Brunswick and south.
