it could have been worse, I could have had tripe for lunch....
I loves me some tripe. Hard to find someone who makes it well. I asked my mom to make it for me the last time she was in the states... She looked at me like I was nuts. Claimed she never made it. Turns out she was already showing signs of dementia and we just didn't pick up on it.

the is a place in Garfield called La Sicilia, which makes it well.  served over pasta, and
they have Italian beer(and wines). just down the street from the CVS off Midland ave.

Never had tripe over pasta. My mom always stewed it with potatoes. But I'd try it.
