I like it but it's not yet perfected. The biggest issue is that I would like it to be more rare. I've been gradually lowering the temp but now I think I've got to cook it for less time. I'm down to 275° for 90 minutes (6 1/2 lbs) after searing the outside. The good thing is that although too well done for my tastes, it is still plenty juicy.
