Morning, Mayor T.
What's crack-a-lackin'?
Hit another temp record yesterday, got all the way up to 78, but the party's over today. It was a good run while it lasted. You?

This was the pizza I got yesterday. Nashville Hot Chicken. Yummo!

It was beautiful here too yesterday. I only stepped out a bit to go pick up the boys from school. Today will be a dreary, rainy day and I'm sure the temps will drop.

Doesn't exactly look like pizza but looks delicious nevertheless.

I didn't take any photos of the roast, potatoes, nor salad but when you've seen 'em once, you've seen them all.

Sounds good, even without the pic.

I've been experimenting with this cut of meet for the last couple of months. I like it but it's not yet perfected. The biggest issue is that I would like it to be more rare. I've been gradually lowering the temp but now I think I've got to cook it for less time. I'm down to 275° for 90 minutes (6 1/2 lbs) after searing the outside. The good thing is that although too well done for my tastes, it is still plenty juicy.
