Well I am 30% Portuguese, 60% Polish and 10% Ligero.
That 10% explains a lot.

Friday afternoon with an original EPC Elencos. Probably one of my top 3 EPCs.  Afternoon shower dropped temp over 10°.  😁

Did you leave them on the warning rack the whole time? Did you flip them at some point? Enquiring minds want to know.
I left them on the warming rack until the last hour. I flipped them a few times. not the best cut of ribs, probably why they were on sale. next time I'll wrap them in foil until the last hour and let them cook in their own juices. good flavors though. Texas Dry Rub and I made Carolina Sauce to finish them with.
